Most of my friends know that I have a slight addiction to chickpeas. If I’m not eating raw food, then I must be eating chickpeas πΈ I love using chickpeas to make various dishes, not only savory dishes like the vegan omelette, but also sweet ones, such as my signature vegan and gluten-free fluffy pancakes. Today, I experimented with chickpeas again to make these heavenly delicious Chocolate Cookie Dough Caramel Slices. The chocolate cookie dough are made with chickpeas, almond butter and naturally sweetened with dates, so this dessert is basically super healthy, high in protein, grain free and gluten-free. The raw caramel layer in the middle is mostly made with dates with a bit of tahini. With simple, natural and healthy ingredients, you won’t be able to imagine how good this is until you take the first bite. Most importantly, I can assure you that you won’t be able to taste the chickpeas hidden in the cookie dough as they are masked by the cacao flavor. So, this is perfect for those who are tired of having boring beans cooked in the savory ways.
Ingredients:
Chocolate Cookie Dough:
6 Tbsp water
Raw caramel:
1 cup pitted medjool dates
1/4 cup coconut water
1 heaped Tbsp tahini or almond butter
1/2 tsp vanilla powder
1 tsp Maca powder (from Organic Burst)
Pinch of himalayan salt
Directions:
For the Chocolate Cookie Dough:
- Place all ingredients except water into a food processor and process until smooth
- Add more water if the mixture is too dry, it should be able to form a dough-like mixture. I added around 6 Tbsp water to achieve this consistency, but it depends greatly on the moisture of the chickpeas
- Divide the dough into 2 equal parts and press half of it firmly to the bottom of a lined baking tray
- Transfer the baking tray to the freezer while you are making the caramel
- Quickly rinse the food processor and make the raw caramel
For the Raw Caramel:
- Place all ingredients into a food processor and blend until smooth
- Remove the baking tray from the freezer and spread evenly over the chilled cookie dough layer
- Top with the remaining half of the cookie dough mixture and freeze for at least 3 hours until it has fully set
- Once hardened, cut it into desired size and devour! π
