Matcha Maiden‘s matcha powder has become one of my favorite superfood addition to my smoothies and nice cream. Matcha is super high in anti-oxidants, and it even has 137 times more anti-oxidants than regular green tea. Apart from high level of anti-oxidants, it also contains various vitamins and minerals which help to boost your immune system, detox, as well as maintain general wellbeing.
Over the past weeks, I’ve been experimenting with it to develop the best recipe of matcha nice cream. Originally, I tried with the classic recipe using frozen bananas. However, the taste of banana is too strong that it somehow masked the matcha flavor. Therefore, I tried with some other fruits and finally I found that the best flavor is achieved by using frozen pears and custard apples. Banana lovers please don’t freak out when you see there is no banana in this recipe, this nice cream is still super creamy and scrumptious. Most importantly, it tastes literally the same as the famous milky and creamy Japanese soft serve.
I also made a gluten-free matcha waffle using the matcha pancake mix from Naked Seeds and topped with this super creamy matcha nice cream. It is definitely the best dessert ever for matcha lovers! π΅π
Ingredients:
Matcha Nice Cream:
2 frozen ripe pears
1 frozen custard apple
1/4 cup unsweetened almond milk
1/2 tsp vanilla powder
1 tsp matcha powder from Matcha Maiden
Matcha Waffle
76 g Matcha & vanilla pancake mix (or you can use my sourdough waffle recipe here)
100ml water
1 chia egg (1 Tbsp ground chia seeds + 3 Tbsp water)
Coconut oil
Directions:
- Prepare the chia egg and let it sit for 10 min
- In a medium bowl, mix all waffle ingredients well
- On the waffle maker, brush some coconut oil on the grid before preheating it
- Gently pour the waffle batter onto the waffle maker. Use a spatula to spread the batter evenly on the waffle grid
- Close the waffle maker and wait until it is done. Mine took around 7 minutes, but it depends on your waffle maker
- When the waffle is cooking, you can start making the matcha nice cream
- Place everything into a high-speed blender and blend until smooth
- Scoop out the nice cream and place it on top of the waffle using an ice cream scooper
- Top with your choice of toppings and enjoy ππ»ββοΈ
