The Ultimate Vegan Sandwich (Vegan, Gluten-free)

As a student, I’m super busy towards the end of semester. I usually don’t have much time to prepare my lunch at home and for most of the time, I have to work at school. So, this Ultimate Vegan Sandwich is always in my everyday packed lunch menu πŸ’ƒπŸ» You can actually prepare a batch of the following ingredients in advance. Then, the assemble of the sandwich will be super quick and simple.

Ingredients:

Coconut flour bread (recipe here)

Roasted Beetroot Hummus:

3 small beets
425 g cooked chickpeas
2 Tbsp apple cider vinegar (or lemon juice)
2 Tbsp tahini
2 cloves garlic
1/2 tsp paprika
1/4 tsp cumin
1/4 tsp chilli powder
Salt to taste
1/4 cup water

Baked Marinated Tempeh:

1 Tempeh
2 Tbsp tamari
1 1/2 Tbsp apple cider vinegar
1 tsp coconut nectar
1/2 avocado
Handful of Kale

Directions:

Roasted Beetroot Hummus:

  1. Preheat oven to 200Β°C
  2. Rinse the beets. Pierce them a few times with a fork, place on a lined baking tray and cover loosely with aluminium foil
  3. Place in the oven and bake about 50 minutes. Set aside to cool
  4. Peel the beetroots when cooled
  5. Add the peeled and chopped beetroots to a food processor, together with all other ingredients and process until smooth.
  6. You can add more water to achieve your preferred consistency

Baked Marinated Tempeh:

  1. Cut the tempeh into thin slices.
  2. Preheat oven to 180Β°C
  3. Mix the ingredients of the marinate together in a small bowl
  4. Using a brush, brush the marinate on both sides of the tempeh
  5. Let them sit for 15 min and bake them at 180Β°CΒ for 15 minutes, flip them upside down and bake for another 15 minutes.
  6. Done!

Assembling the sandwich:

  1. Reheat the coconut flour bread in the oven for 2 minutes (I used 180Β°C) and cut it into half horizontally, but not cutting it all the way through, as I don’t want it to be separated into two pieces
  2. Generously smear a layer of beetroot hummus on the upper and lower half of the bread
  3. Place a handful of kale on top of the hummus
  4. Followed by the baked tempeh and avocado
  5. Then you will have a heavenly vegan sandwich ready to go with you! πŸ˜‰
