A Beautiful Mistake
I usually plan ahead when creating a recipe. However, unlike most of my recipes, this Herbal Mocha Vegan Ice Cream Bowl was created by mistake. This morning when I was preparing for my breakfast, I was about to add two tablespoons of Teeccino ground hazelnut herbal coffee into the french press. π³I still have no idea why I did this, but things happen and I ended up adding the herbal coffee into my Vitamix instead. Since I have already added oat milk, cacao powder and other spices in the blender, separating the ground herbal coffee from the mixture wasn’t possible.
Now, I only have 2 options, throw everything in the blender away and start fresh. OR I can just go with it and see how it turns out. ππ»ββοΈOf course I chose the latter option. I wouldn’t in the right state of mind waste my favorite cacao powder, chocolate protein powder and maca powder etc. πI kept my fingers crossed and continue making my vegan ice cream bowl, hoping everything will be alright.

Outcome
After I blended the “concoction” until everything is smooth and creamy, I carefully took a spoonful and gave it a taste test. And you all know how it turns out right? Coz if it’s bad, I wouldn’t write a blog post dedicated to this recipeπ€£. The outcome is a super decadent, indulgent and chocolately dessert-like breakfastβοΈ. Who doesn’t like having ice cream for breakfastπ?

Herbal Coffee
As you can tell, I’m really enjoying herbal coffee at the moment. I drink them in the morning instead of coffee as it helps me with my anxiety βΊοΈ. In this recipe, I didn’t use any coffee. But the resulting vegan ice cream tastes like the non-vegan mocha ice cream I had when I was a kidπ§π». In fact, I was so excited and happy about this creation that I have to write the blog post immediately after having one of the best breakfasts I’ve had recently π.

Ice Cream For Breakfast, Why Not?
This vegan ice cream is made with all natural whole food ingredients. And the sweetness in the ice cream came entirely from the fruits. I would suggest using super ripe mangoes for the best results because they have the right amount of sweetness. Also, their flavor is not over-powering like bananas usually do and I personally prefer the texture of blended ripe frozen mangoes in vegan ice cream as they provide a fluffier texture. Adding vanilla to the mixture will also make it taste more like ice cream. π¦

Serving Suggestions
As always, I love to top my smoothie/ nice cream (aka vegan ice cream) bowls with fruit roses, cacao nibs, hemp seeds and more fresh fruits. ππ But you can always add some raw vegan granola if you want to add even more crunch to the bowls. Herbal Mocha Vegan Ice Cream Bowl

1/4 cup plant milk (here I used Oatly)
1 tsp cinnamon
1 tsp maca powder
1 heaped Tbsp raw cacao powder
1/2 tsp vanilla powder
1/2 cup frozen mango
1/2 frozen zucchini
2 frozen pears
1/2 cup frozen cherries
Directions
- Place all the ingredients into a high-speed blender according to the order above.
- Blend until everything is smooth and creamy. You may need to stop half way through to scrap the sides down to ensure the mixture is completely smooth.
