My mom is definitely the best one on earth! The other day she bought me a whole box of figs (around 20 in a box)! These figs are so juicy and big that I really enjoy them. Therefore, in order to finish them before they gone bad, I created this recipe. Figs are naturally sweet, so you don’t need to add any sweetener. Also, as figs are high in fiber and tofu being high in protein, this is absolutely one of the best breakfast food you can have. And the best thing is, it only requires 5 minutes to make it, so everyone with a food processor can whip this up easily and enjoy this heavenly and nutritious breakfast as frequent as you would love to.

Ingredients:
1 block silken tofu (around 250g)
5 juicy figs (chopped)
1 tsp psyllium husk
1/4 cup coconut water (or sub water or plant milk of choice)
1 tsp vanilla powder
Directions:
- Just place all ingredients into a food processor and process until smooth. If it is too thick, you can add more coconut water to achieve your desired consistency.
- You can enjoy it right away or chill it in the fridge for 1 hour (or even better, overnight) before serving.
