I always love to make my own protein bars as a pick-me-up snack and a pre-workout fuel. Not only because they are so easy to make, but also because I can customize them with my favorite superfoods. This time I made some with some matcha powder from Matcha Maiden, hemp seeds for the nutty flavor and hemp protein powder for the energy boost. I also added some raw cacao nibs for some extra crunchiness and a hint of chocolate flavors. This recipe has definitely became one of my favorite one that I’ve already made three batches of these in 2 weeks 😆
They are also a very good topping on smoothie or nice cream bowls 😃
This recipe makes 8-10 bars
Ingredients:
1¼ cups medjool dates (pitted)
1 cup mixed nuts or seeds (I used 1/2 cup pistachio and 1/2 cup pecans)
¼ cup hemp seeds
1 tsp vanilla powder
1 Tbsp matcha powder
2 Tbsp cacao nibs unsweetened
Directions:
- Place your choice of nuts & seeds into a food processor and process until coarsely ground. You don’t want it to be too fine, while remaining so texture of crunchiness
- Add the remaining ingredients (except cacao nibs) into the food processor and process until a dough-like mixture is formed.
- Lastly, gently fold in the cacao nibs and press the mixture firmly into a lined baking pan.
- Freeze for at least an hour until it is hardened. Cut then into bars and store them in the fridge for up to a week.
