3-Ingredient Matcha Pancake Stack with Raw Cacao Mousse (Vegan, Gluten-free, Refined Sugar-free)

As mentioned in the last post, I met the lovely Sofie from the Naked Seeds, and she kindle gave me some samples of her products to try. As I really love matcha, especially when Matcha Maiden‘s one is used, I can’t wait to try the matcha & vanilla one once I got back my hands on the kitchen. I used Neat Egg in this recipe and it turns out to be so good! Fluffy and flavorful, while inside remaining moist. I also created a raw avocado cacao mousse recipe with another amazing product – SMOOTHIE BOMB from the Nutrition Darling, which has become one of my daily staple in my smoothies, nice cream bowl and basically everything!

Ingredients:

76 g Naked Seeds Matcha & Vanilla Pancake Mix
1 Neat Egg (1 tsp of Neat Egg Mix + 2 tsp water)
1/4 cup unsweetened almond milk

Directions:

  1. In a medium bowl, mix everything until they are well combined. Let the mixture sit for 5 minutes so that all liquids are absorbed.
  2. Preheat a non-stick pan on medium heat. Add a little bit of coconut oil to the pan.
  3. Add about a 1.5 Tbsp of batter to the pan for each pancake. Cook for a about the 1 minute on one side, flip and cook for one more minute on the other side.
  4. Layer with raw cacao mousse (recipe below) and fruits of your own choice in between layers of pancakes.

Raw Cacao Mousse Recipe

Ingredients:

1/2 ripe avocado
2 heaped Tbsp raw cacao powder
2 Medjool dates
1/4 cup unsweetened almond milk
1 raw cacao smoothie bomb

Directions:

Place everything into a food processor and process until smooth.
You can eat it right away, but I would recommend you to place the mixture into the fridge and chill until firm (about 1 hour).
