Waffle has long been my favorite food in my childhood memory. I love smashing a thick layer of peanut butter and butter on top of it. However, ever since I turned to a vegan and mostly gluten-free diet, I have never been able to find any waffles for me to eat. Last week, my mom bought a electric waffle maker home because she found this on sale and she knew that I’ve been craving for waffles for soooo long. Christmas came much earlier! When I saw this, I’m just like a kid receiving her Christmas present ☺️ Hence, I just can’t wait to whip up a vegan and gluten-free waffle at home during the long weekend, and I serve it with my favorite acai nice cream. Isn’t it a vegan dream? 😆
Ingredients:
Waffles:
1.5 tbsp coconut flour
1 tsp coconut sugar
1/4 tsp baking soda
1/2 tsp vanilla powder
1 tsp Organic Burst Maca powder
1 vegan egg (I used Neat Eggs*, but you can also use flax eggs or chia eggs)
1 vegan egg* + 1 Tbsp almond milk
2 Tbsp almond milk
1 tsp coconut oil
* Neat egg = 1 tsp of neat egg powder + 2 tsp water
Acai nice cream:
1 tsp Organic Burst acai powder
1 frozen banana
1 frozen persimmon
1 cup frozen grapes
1/2 tsp cinnamon powder
1/4 cup almond milk
Directions:
For the waffle:
- Coat your waffle iron with coconut oil and preheat it, it usually takes around 2-3 minutes
- Mix all the wet ingredients in a bowl
- In other bowl, mix all the dry ingredients, add this to the wet ingredients until the batter is smooth and clump free.
- Let it sit for a few minutes, then pour it into the waffle maker and smooth the batter until it covers the wells.
- Close the waffle iron until the waffle is ready (it normally takes 3-4 minutes)
- Once the waffles are done, carefully remove them from the iron and top with nice cream and your choice of toppings
For the nice cream:
- Put everything into a high-speed blender and blend until smooth
- Place a scoop of nice cream on top/ beside the waffle (nice cream are waffles are match made in heaven right? 🤪)
