Persimmons have been back in season recently! Since they are so creamy and soft, I usually like to freeze them and blend then with some other fruits (like banana, cherries or blueberries) for making Nice Cream (aka the simplest and the most delicious dessert!) More recipes using persimmons are coming soon too (think persimmon coconut porridge 😄) Nice cream is perfect as a pre- or post-workout meal, and also as a refreshing treat for yourself during the super hot summer days.
Ingredients:
2 super ripe and soft persimmons (chopped and frozen overnight)
1 frozen mango
1/4 cup raw coconut yogurt (recipe here)
1 tsp Amazonia Raw Prebiotic
1 Tbsp baobab powder
1/2 tsp cinnamon powder
Direction:
Place everything in the Vitamix and blend until smooth 🙌🏻
