These hemp protein bars are one of my favorite food to make. Not only are they easy to make, but also easily portable to school or workplace. So whenever I need some energy boost, I can take a bite at these yummy and wholesome protein bars. I seldom eat the store-bought ones after developing this recipe as I can customize my protein bars according to my needs and preferences and it’s much cheaper to make your own bars. Take a look at this recipe and you’ll realise how simple it is!
Ingredients:
1 cup + 2 pitted dates
1 cup mixed nuts and/ or seeds (I used brazil nuts and sunflower seeds)
1/2 cup shredded coconut
1/2 cup hemp flour
3 Tbsp chia seeds
1 scoop of protein powder of your own choice (I used LivWell‘s Raw Vanilla Plant Protein Powder)
2 Tbsp goji berries
1 tsp Aduna moringa powder
Water if added
Directions:
- Soak the pitted dates into water for around 30 mins
- Put the nuts and/ or seeds into a food processor until coarsely grounded
- Add the dates into the food processor and blend until a dough-like mixture is formed
- Remove the dough from the food processor and place it into a large mixing bowl
- Mix in other ingredients into the bowl and mix them well with your hands
- Add water (one tsp at a time) if the mixture seems to be a bit too dry and crumbly
- Press the mixture firmly to a bread tin lined with baking sheets and place it in the freezer for at least half an hour
- Remove from the freezer and cut it into bars
- Wrap them with baking papers or plastic wraps if you are bringing them out with you π
