The weather is becoming hotter and hotter these days in Hong Kong. In order to cool myself down, I’m experimenting with some refreshing summer smoothie recipes because sometimes you may want something other than banana ice-cream. This smoothie is called Triple P Summer Smoothie because the major ingredients are papaya, pitaya and pear and it is naturally sweetened with the ripe papaya and pear, with the addition of baobab powder for a more fruity flavor. If you wish to use this as a meal replacement or a thicker texture, add 1/4 cup of gluten-free oats. It is a great breakfast options or an afternoon snack when you are craving for some sweets. For mums, your kids will definitely love this too! 😚
Ingredients:
1/2 ripe papaya
1 Pitaya
1 ripe pear
1/4 cup raw coconut yogurt*
1 Tbsp baobab powder
1 tsp vanilla powder
1/4 cup gluten-free oats (optional)
* Note: If you don’t have raw coconut yogurt, you can use almond yogurt or coconut cream for a thicker smoothie. Any non-diary milk will work as well, but the product will turn out to be thinner.
Directions:
- Place everything in a high-speed blender (I used Vitamix) and blend until smooth.
- Enjoy with your favorite toppings!
