Creamy Hemp Seed Dressing (Vegan, Raw, Gluten-free)

Since I was given a big pack of hulled raw hemp seed from Lariese Purely Organic and I started working as an internship recently, I usually bring pack my own packed lunch to work. And my favorite lunch box is a kale salad with creamy hemp seed dressing. This recipe is so simple that it requires only 7 ingredients and 5 minutes of “cooking” time. I usually prepare this before I go to bed at night and keep it in the fridge, then it will thicken throughout the night and the other day you will get an amazing creamy hemp seed dressing for your salads or zucchini noodles, they are good to be dipped with bread or veggie sticks too!

Recipe adapated from Oh She Glows, but I made some twists to add some asian kick to it.

 

Ingredients:

1/2 cup raw hulled hemp seeds (from Lariese Purely Organic)
1/2 cup coconut water
2 tablespoons nutritional yeast
2 tablespoons apple cider vinegar
1 clove garlic
1/2 tsp ginger powder
Salt to taste

Direction:

  1. Place all the ingredients into a high-speed blender or food processor and process until smooth.
  2. Pour the dressing into an air-tight container and keep in the fridge overnight for it to thicken.
  3. This dressing is perfect to be paired with kale salad, raw zucchini noodles (aka zoodles) and spread on bread 😉
