Simple Homemade Coconut Butter (Raw, Vegan, Gluten-free, Sugar-free)

Coconut butter is so delicious and super duper easy to make. All you need is just some unsweetened coconut flakes or shredded coconut (not non-fat or reduced fat) and a high speed blender or food processor. I like to use my coconut butter in making raw desserts (such as chocolate peppermint cups) or spread it on bread. It is just perfect for those who love coconut and you don’t even have to buy the expensive ones in stores since it is so simple to make.

Ingredients:

3 1/2 unsweetened coconut flakes
1/4 tsp cinnamon (optional)
1/4 tsp vanilla powder (optional)

Directions:

  1. Blend the coconut flakes in a high speed blender or food processor until a butter-like texture is obtained.
  2. Add the cinnamon and vanilla powder and blend again until they incorporate into the coconut butter
p.s. I spend about a minute using my Vitamix. If you are using the food processor, make sure to stop the processor and scrape the sides down with a spatula from the to time to prevent over-heating of the motor.
