Since most store-bought pesto contains dairy, I decided to make my own vegan pesto at home. Turns out it’s not only easy to make, but it also tastes so fresh and you can use whatever nuts or seeds you want. Nutritional yeast is the key ingredient of the pesto as it gives the cheesy flavours without having to use vegan cheese.
Ingredients:
1 cup basil leaves
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup walnuts
1/3 cup extra virgin olive oil
Juice from 1 lime
2 garlic cloves
Pinch of sea salt to taste
2 tbsp nutritional yeast
Directions:
- Place all ingredients into a food processor or blender and blend until smooth. You can add a bit of water or olive oil to obtain your desired consistency.
