This carrot dressing is definitely one of my stable I kept in my fridge. It goes well with literally everything, including zoodles (aka zucchini noodles), normal noodles, spread on bread, salads or just as a dipping sauce for veggies!
Ingredients:
1 bunch of kale
Carrot dressing
Goji berries
Red and yellow bell pepper
Nutritional yeast
Dressing:
1 Carrot, chopped
1 Yellow Bell Pepper, chopped
½ Cup Filtered Water
1/4 tsp Ground Cumin
1 Tbsp Hemp Protein Powder
1 Yellow Bell Pepper, chopped

2 sachets of Four Sigma Foods Mind Herbs
Juice of 1 Lemon
1/2 Tbsp Miso
2 Tbsps Nutritional Yeast

3 sun-dried tomatoes
Handful of coriander
3 Tbsp raw nut butter
1 tsp Paprika
1 Garlic Clove

Direction:
- For the dressing, place all of the ingredients into a food processor and process until smooth.
- Wash and remove the stems of kale.
- Tear the kale leaves into bite size.
- Pour about 5 tablespoons of the carrot dressing over the kale and massage until it softens.
- Add other ingredients. Toss and serve.
